Hoping to be there for 4-5 days near thanksgiving. I see there are 18 wild trout waters listed on this site: http://www.flyfishingnc.com/streams/...-trout-streams
but I have never been on any of the water there.

I know you guys can be pretty tight lipped about this stuff but even if you are willing to share some info on a good camping spot (I'll probably be backpacking, but a night or two of car camping wouldn't hurt if it allowed me to access some good water) that would be useful.

Swing by Rivers Edge Outfitters in Spruce Pine. Only 6 miles from the Avery Co. line. We will share a few of our favorite wild waters. There are several hike in streams with great camping and days of fishing.
