Couch's in Ooltewah.
Smokey pork loin (I believe) sliced thin (like deli sandwich meat), served on a toasted bun with tomato and lettuce (and mayo). Homemade pies and Cokes (still can be bought in a glass bottle).

great BBQ
Hands down Ridgewood just outside of Bristol TN. I believe it was 1989 that is won the People Magazine award for best BBQ in the nation. Only one person in the world knows how to make it, the owners grandaughter. Family secret passed down. And by the way the blue cheese dip is out of this world!

As one who once drove 400 miles out of his way to try some BBQ ( I like me some Q ), I had stayed away from this thread. We all have our favorites. But after reading it, I don't see mine listed so I thought I'd add my $.25 -
best in NC for me - Gary's in China Grove.
closely followed be Lexington #1 and Mitchell's ( Mitchell's use only local heirloom hogs from a farmer he knows )
best ribs - Jim Neely's in Memphis. The Rendezvous and Corky's can fight it out for the biggest tourist trap and mushy ribs. Neely's are simply awesome. everytime.
Nearly the best ribs ( and def. the best frito/tamale pie ) - McClard's in Hot Springs, AR
best sausage - Salt Lick out side of Austin
best beef - Sonny Bryan's in Dallas, the original store. I got there at 930am one day and there was a line already. They don't open till 10.
best turkey - what the heck are they bbq'ing turkey for. Don't they know you DEEP FRY a turkey?
I've also had great Q from numerous small road side stands, you know the kind with a smoker on a trailer, a few picnic tables and a metal garbage can full of cans of Bud. And my dad smokes a killer pork shoulder.

Would you guys quit it. I'm getting depressed that I have no chance to eat at any of these places.

hmmm....are you sure you don't mean the cut they refer to as the boston butt? Most people consider the shoulder to be the prime cut for a pulled pork sandwich. The boston butt is about like a half inflated basketball.

A boston butt is the top portion of a pork shoulder. It's not the shank portion (which is referred to as the picnic shoulder).
But, it is all pork shoulder. The butt of a pig is where you get ham. The stomach is where bacon comes from, and the top of the back is the loin. The butt shoulder and loin are the premium cuts of pork and are located high on the animal - which is where the term 'high on the hog' comes from.
By the way, I vote for Scott's BBQ in Hemingway, SC. I'd still like to try a few of the hallowed places in Eastern NC.

Hey, Silver, we all have to make choices and a long time ago you guys up there chose cheese curds and lutefisk. You'll choose better next time, won't you?
